Baked Chicken Caprese

A quick, yet easy Italian dinner that we like to whip up is Baked Chicken Caprese. Follow the simple steps below to create a fan-favorite within your home, too!

Chicken Caprese


  • 6 ounces fresh mozzarella, sliced into 5 or 6 slices (roughly 1.5 slices per breast)
  • 1/4 cup fresh basil, chopped
  • 4 Chicken Breasts, butterflied
  • 3 Garlic cloves, minced
  • 2 medium tomato, sliced into 10 slices
  • 1 small Red Onion, sliced into thick slices
  • 1 tbsp Balsamic Vinegar
  • Roasted Red Peppers
  • 1 tbsp Olive Oil
  • Salt & pepper




  • Preheat the oven to 375*
  • Prep ingredients
  • Sprinkle the chicken with salt & pepper
  • Stuff the chicken with the garlic, basil, mozzarella, roasted pepper and slice of tomato, then fold the chicken back over (can secure with a toothpick if needed)
  • Place the chicken into a casserole dish
  • Baste with the olive oil and bake for 30-35 minutes, until cheese is melted and bubbling and chicken is cooked through.
  • Turn on broiler for 2 or 3 minutes to brown the top of the cheese.
  • Remove from oven and sprinkle with fresh basil and drizzle balsamic vinegar or balsamic glaze on top

I served this meal with a side caprese salad (can never have enough!) with Carolina yellow rice.
