Homemade Spaghetti Sauce

  • 1 yellow onion, sliced
  • 1 lb ground beef
  • 28oz can crushed tomatoes
  • tomato paste (amount varies depending on how thick you would like the sauce)
  • 16oz slice mushrooms
  • head of garlic, crushed
  • 1 tbsp olive oil
  • 3 bay leaves
  • 2 basil leaves
  • salt & pepper
  • 1 tbsp dried parsley

  • heat olive oil in high-sided fry pan
  • sauté the garlic; constantly stirring as to avoid burning of the garlic
  • add onions & mushrooms and cook until al dente
  • In a separate, large, high-sided fry pan cook the ground beef until brown (then drain)
  • Add onions, mushrooms, garlic, crushed tomatoes, tomato paste, and bay leaves thru parsley to beef pan to simmer for 15 minutes

**Suggest to serve with garlic bread. Steve had this sauce over some linguine while I had it over some butternut squash – my attempt to be a bit healthy **
