Ruby Red Grapefruit Bread {Cake}

Did you know that there are so many different kinds of grapefruits? You have Oro Blancos, Melo Golds, Pummelos, Whites and Red (ruby), pink &white just to name a few. Ruby grapefruit’s are slightly tart, and slightly sweet, but extremely juicy! Their deep, rich color isn’t harmful on the eyes either – if they last that long to look at.

Jumping on the band wagon of spring, I decided our breakfast bread for the week should be something moist (yes, I know the word everyone DESPISES, but it is sooo fitting to describe this recipe), citrusy and just all-around scrumpcious! I feel like we could really have a lot of variations to this recipe – pomelos and blood oranges, I’m looking at you!!

Dr. Oz says, “Grapefruit acts as a digestive assistant that breaks down proteins so that they are ready to be used more quickly. Grapefruit can also accelerate your body’s ability to break down fat.”  Um, awesome! Did I mention Steve and I are trying to “eat healthier” and attempt to “workout” for those summer bods? I say attempt, because really, I love food and sometimes saying no to that brownie just isn’t as fun!

I never know if I should call these things cake / loaf / bread / quick bread. Whatever you call this, it is delicious!! And, actually relatively healthy. (remember that whole healthy eating movement mentioned above?) This cake would be a fabulous addition to a brunch spread, like for Easter or Mother’s Day. Or just make it on a Sunday, because it’s sunny outside and have it for breakfast on-the-go for the week! If you keep it in the fridge it may last that long – or you could eat it all in one sitting because you just couldn’t help yourself… the choosing is yours!



Ruby Red Grapefruit Bread {Or Cake 🙂 }

Bread (cake)

  • 1 1/2 Cups All-Purpose Flour
  • 1 1/2 TSP Baking Powder
  • 1/2 TSP Salt
  • 3 Eggs
  • 3/4 Cup Greek Yogurt I use Dannon Light & Fit Vanilla Greek
  • 1 Cup Light Brown Sugar packed
  • 1/2 Cup Canola Oil you can subsitute with vegetable oil or melted coconut oil
  • 1/3 Cup Ruby Red Grapefruit Juice freshly squeezed
  • 1 1/2 TBSP Grapefruit Zest
  • 1 TSP Vanilla Extract


  • 1 Cup Confectioners' Sugar sifted
  • 2 TBSP Ruby Red Grapefruit Juice freshly squeezed
  • 1/4 TSP Vanilla Extract


  1. Preheat oven to 350* & grease your loaf pan (I used a 9x5)
  2. Whisk together the dry ingredients (flour, baking powder & salt) in a medium bowl.
  3. In a medium/large bowl, whisk the eggs. Once they are whisked, add in the yogurt, brown sugar, oil, grapefruit juice, zest and vanilla extract - whisking until combined.
  4. Add the wet ingredients from step 3 to bowl from step 2; mix together with a wooden spoon or rubber spatula (do not over mix!)
  5. Spread your batter in the loaf pan. Double tap on the counter to release any air bubbles then pop that sucker into the oven to bake! It all depends on your oven, but mine took approximately 55 minutes. You can test yours by the tried and true toothpick method - the cake is done when the toothpick inserted into the center comes out clean!
  6. Remove this bad boy from the oven and set on a wire rack to cool - DO NOT DIG IN JUST YET; PATIENCE IS A VIRTUE AND THE GLAZE IS MAGNIFICIENT!
  7. While the cake or bread, whatever you feel like calling it is cooling, whisk together the glaze ingredients and simply drizzle over the top of the cake. Slice and enjoy!
