The Best Banana Bread {EVER}

With rainy days, I just like to dream of sitting by the fire, sipping tea and snuggling up with a great book. But seriously, who am I kidding, those are great THOUGHTS, but do people actually have time to just sit and relax? In our household, we’re constantly on the go – yes, probably a little too much. So, with cold dreary weather, I utilized this time to BAKE. Still somewhat productive and I got the heat from the oven cranking; double win. Also, did I mention we are heading into June and temperatures are still dropping into the low 50s (sometimes even the 40s)?! What gives Mother Nature?

While I would love to say we have been sticking to our healthy eating and meal prep, life has seemed to get in the way. Maybe that’s why I have been MIA from the blog lately as well? To give you a little bit of an update on what has been going on in our lives:

  • Steve started a new job aka he went back to being self-employed. Restarting a business from almost the ground up has not been an easy task, but luckily the work has been flooding in – to the point where I am begging him to say ‘no’ from time to time. He’s been working 7 days a week from 7AM – 9PM just to keep up with the demand! I am hoping it starts to die down a bit because there are quite a few projects around the house and farm I’m trying to get on his schedule.   • In the past 3 weeks, I have traveled to PA 2X (6+ hour drive each way – woof) to purchase horses for clients, as well as, travel to Long Island to look at a horse trailer (new to us – welcome 6H H2H). Juggling that and physical therapy 2X per week with work has been a bit difficult to keep up (woe me I know). I had all intentions of drafting posts during those long car rides, passing the buck of driving to my mother & Olivia, but you know how that goes… Did I mention Mother’s Day was in there too? You can checkout my post on great gifts here – it doesn’t have to be Mother’s Day to shower her with gifts!

So, enough about us, back to banana bread since that’s truly why you came, right?

Well, if so, thanks for indulging me in my little rant, but I know full well we are not the only ones super busy. With a  crazed schedule comes the need to have food ready to ‘grab and go’ as I like to say. And since I have been neglecting to eat my bananas and had a whole pile of them (which were EXTREMELY ripe), I decided to skip the smoothie and indulge in some warm bread on this dreary day. And I am so glad I did. I even toasted it a bit on the stovetop with some butter mmmmmm.

The Best Banana Bread {EVER}

Ingredients

  • 1 Cup Sugar
  • 1/2 Cup Butter melted
  • 2 Eggs
  • 5 Ripe Bananas Mashed
  • 1/2 Cup Buttermilk
  • 1 TSP Vanilla
  • 2.5 Cups Whole Wheat Flour
  • 1 TSP Baking Soda
  • 1 TSP Salt
  • 1 Cup Mini Chocolate Chips

Instructions

  1. Preheat oven to 350F. Grease or spray a 9 x 5 inch loaf pan, set aside.

  2. In a large bowl whisk together the melted butter, and sugars. Add the eggs, bananas, vanilla and buttermilk; whisk until smooth.

  3. Sprinkle the flour, baking soda and salt over the butter mixture and stir to mix until just combined. Fold in the mini chocolate chips.

  4. Pour batter into prepared pan and bake 60 minutes +/- or until crust is golden brown and a toothpick inserted into the center comes out clean. Cool until warm before serving!

Recipe Notes

  • Optional: add chopped nuts
  • Substitute: Buttermilk with yogurt or sour cream
