Creamy Garlic Mashed Potatoes -
Roasted Garlic and Potatoes? What other heavenly combination could beat this?! Nothing in my opinion. I am a big fan of starches, sometimes too big in fact, but hey they’re a comfort food for a reason! After a long day of traveling to NH and back (and NY and back the prior day), Steve just wanted a good ol’ Steak & Potatoes dinner. I was more than happy to oblige as not only is this an easy meal to cook, but minimal dishes for clean up (the key to my heart is to never have to do dishes again). Try our easy go-to recipe for homemade potatoes below and let us know what you think 🙂 Creamy Garlic Mashed Potatoes 45 mins | Serves 4 Ingredients: 1 head of garlic 1/2 cup Sour Cream 1/4 cup milk 6 Yukon Gold potatoes Sea Salt & Pepper Instructions Roast the garlic cloves on low heat for approximately 20-25 minutes; keep covered and shakes often. While the garlic is cooking, wash, peel & quarter the potatoes. Boil the potatoes for approximately 20 minutes or until soft Once the garlic is soft, remove from heat to remove skin from garlic (I like to chop off the ends and it peels right off) Drain the potatoes; add garlic, salt, pepper, milk, sour cream, and chives (optional) to the pot and mash with a potato masher until smooth Enjoy! (try not to eat the whole batch like i do)
